    MHEALTH CHILDHOOD OBESITY PREVENTION: A LOOK INTO THE HISPANIC MOTHER’S PERSPECTIVE

    Along with increasing physical activity, improving nutrition is an important behavior to target to reduce the risk of obesity in children and adolescents. To date, a nutrition-focused mHealth intervention used to promote obesity prevention and healthy living among Hispanic children and adolescents has not been specifically developed for Hispanic mothers. The purpose of this study was to provide information on feasibility and acceptability of a mHealth child nutrition intervention among Hispanic mothers. The data was collected from an online survey and telephone interviews from 30 mothers of 8-12-year-old Hispanic girls. Most mothers were 40 years old or younger (70%), identified race as white (76.7%), and married (86.7%). Ninety three percent of mothers had post-high school education, and most had more than one child under 21 years of age living in their home (86.7%). There was no statistically significant association between Hispanic mothers’ beliefs about their child’s daily fruit and vegetable servings and parent-reported child daily consumption of fruit and vegetables. There was no statistically significant association between mothers’ actions for providing frequency of fruits and vegetables via meals or snacks with the parent-reported child daily consumption of fruit and vegetables. Hispanic mothers’ attitudes of the importance to eat healthy foods and their attitude to encourage healthy eating were not able to be assessed because everyone felt these were both important. The relationship between Hispanic mothers’ perception of control in what their child eats and their attitude to encourage healthy eating was not able to be assessed because all mothers felt it was very important for parents to encourage healthy eating in children. These findings indicate the feasibility of this methodology because parents who participated in this study have access to the needed technology, are familiar with texting, and that texting would be an acceptable child obesity prevention method. Although the study population did not provide the ability to address all the study questions, the results indicate Hispanics are viable research participants to use mHealth and support healthy eating strategies. Texting may be part of the solution for providing health promotion messages relevant for Hispanics

    Actualmente en la empresa EL BUEN VINO, S.A. los niveles de venta aumentaron en el último semestre del año 2013 por lo que se requiere analizar la administración de la cartera comercial para determinar la efectividad de las operaciones realizadas a través de herramientas financieras que permitan evaluar los procesos y procedimientos utilizados en el departamento de cartera considerando el aumento en los saldos en la integración de las cuentas. Al efectuar el análisis financiero se aplicaron herramientas de análisis financieros tales como métodos de análisis horizontal y vertical para determinar los aumentos y las disminuciones de importancia relativa en las cuentas que integran los estados financieros. Se implementaron razones financieras que permitió evaluar cada proceso vinculado con la administración de cartera comercial. Al momento de realizar el análisis de antigüedad de saldo se determino el riesgo de cobro que surge de las variaciones en los saldos de las carteras mayores a 30 días. Estos análisis determinaron saldos elevados en la cartera comercial, considerando la incorrecta implementación de estándares de selección de clientes para otorgamiento de créditos y políticas de apoyo a la gestión de cobro. Influyendo la cartera de clientes que poseen condiciones de créditos especiales y conforman las carteras vencidas en la integración de las cuentas por cobrar

    Starch Granule and Crystalline Structures with Relation to Enzyme Digestibility

    Porous starch produced by enzyme hydrolysis has attracted much attention for its adsorption and delivery properties. Porous starch has been successfully prepared from A-type starch, but not from B-type and C-type starches, which is partly attributed to the surface and crystalline structure. The present study aimed to characterize the role of the crystalline structure and the structure-function relationship impacting the susceptibility of starch with different crystalline polymorphs to amylase digestion. The starches were subjected to chemical modification (acid hydrolysis or surface gelatinization), physical modification (heat-moisture treatment, HMT, or high-pressure processing, HPP) or their combinations prior to amylase digestion, and the physiochemical properties of the resultant starches were characterized. Both acid hydrolysis and surface gelatinization removed densely packed crystallites to improve amylase binding and the digestion degree, resulting in the formation of a porous structure in potato starch. Combined acid hydrolysis and HMT reduced the amylase digestion degree of all three starches by increasing their thermal stability and crystallinity from hydrolyzed starch chains that reorganized into more thermally stable structures. The strong electrostatic interaction of sodium sulfate with water molecules decreased the gelatinization degree during HPP, and generally decreased the α-amylase digestion degree compared to HPP in water for all three starches. However, the competition for the water in the starch crystallites and the restricted association of gelatinized starch from reduced free water in sodium sulfate allowed the formation a porous structure in corn and potato starches and their partial transition to a C-like polymorph. The results demonstrate that the combination of chemical or physical modification and alpha-amylase digestion was capable of producing porous starch from B-type starches. This study will help develop porous starch with new properties for applications in food, pharmaceutical and agricultural industries
